And that\u2019s putting a positive spin on it. But hey \u2013 so long as they taste good that\u2019s what really matters eh?&nbsp;&nbsp;At least that\u2019s what we tell ourselves. Now we at SED HQ make cookie cutters \u2013 ergo we make a lot of cookies with which to test said cutters out. So, for the benefit of any new followers and new bakers out there we thought we\u2019d have a look at some cookie making tips. And, alongside side that, some tips on using your cutters to best effect. But first a quick look at a dunking difficult question!<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Is it a biscuit or is it a cookie?<\/h4>\n\n\n\n<p class=\"has-background has-normal-font-size\" style=\"background-color:#d3d3d3\">The term&nbsp;<em>cookie<\/em>&nbsp;comes from America but it\u2019s not synonymous with a British biscuit. The two are very different baked good beasties. We\u2019ll take a little look at the biscuit later in the blog. But for now&nbsp;<strong><a href=\"https:\/\/www.renshawbaking.com\/gb\/what-is-the-difference-between-a-cookie-and-a-biscuit\/\" target=\"_blank\" rel=\"noreferrer noopener\">let\u2019s focus on the cookie.<\/a>&nbsp;<\/strong>&nbsp;Here comes our SED top 10 cookie making tips with a little help from&nbsp;<strong><a href=\"https:\/\/www.delish.com\/uk\/food-news\/g33756334\/how-to-make-cookies\/\" target=\"_blank\" rel=\"noreferrer noopener\">Sally\u2019s Baking Addiction:<\/a> <\/strong><\/p>\n\n\n\n<ol type=\"1\" class=\"has-background wp-block-list\" style=\"background-color:#d3d3d3\">\n<li>Chill the dough once you&#8217;ve made it. And then again once it\u2019s cut out. That lets it settle.<\/li>\n\n\n\n<li><strong>Oven temperatures:&nbsp;<\/strong>&nbsp;Preheat to the temperature in your recipe. I use 200 for most everything. But you\u2019ll know your own oven. You\u2019ll know when they\u2019re cooked \u2018cos they\u2019ll have slightly brown edges. NB: They\u2019ll carry on cooking once out of the oven so don\u2019t overdo.<\/li>\n\n\n\n<li><strong>Have eggs and butter at room temp.&nbsp;<\/strong>You\u2019ll get more volume from the eggs and the butter is easier to work with.<\/li>\n\n\n\n<li><strong>Be accurate with your weighing.&nbsp;<\/strong>Too little flour and the cookies will spread \u2018cos they\u2019re wet. But too much flour and you\u2019ll have no spread and a dry cookie&nbsp;<\/li>\n\n\n\n<li><strong>Flour<\/strong>&nbsp;\u2013 you could use bread flour for a chewier biccie and normal plain flour gives a lighter cookie.<\/li>\n\n\n\n<li>Don\u2019t over mix the dough. That means not leaving the mixer on while you dye your roots! That sort of thing \u2013 \u2018cos too much air means they\u2019ll collapse or spread.<\/li>\n\n\n\n<li><strong>Use a parchment or a silicone mat.&nbsp;<\/strong><a href=\"https:\/\/www.dunelm.com\/product\/red-cookshop-baking-sheet-1000027980?defaultSkuId=30111263&amp;branchCode=0630&amp;gclid=Cj0KCQiAst2BBhDJARIsAGo2ldWGMdbJRkAE7CBL4qCssYvfDDyJ5aWWhd7ie--UhSPv09x67xdq3-0aApyxEALw_wcB&amp;gclsrc=aw.ds\" target=\"_blank\" rel=\"noreferrer noopener\">We like this one from Dunelm Mill<\/a><strong>.&nbsp;<\/strong>It reduces waste so is better for the environment. Don\u2019t put them on a hot baking sheet, that\u2019ll melt the butter and cause spread.<\/li>\n\n\n\n<li><strong>For even sized cookies&nbsp;<\/strong>\u2013&nbsp;if you&#8217;re not going to use a cutter, we use a tablespoon or a teaspoon. No guessing allowed.<\/li>\n\n\n\n<li><strong>Space on the baking tray \u2013&nbsp;<\/strong>give them elbow room.&nbsp;<\/li>\n\n\n\n<li><strong>Sticky biccies \u2013&nbsp;<\/strong>if they feel a bit sticky after you\u2019ve cut them out, pop the tray in the fridge for five mins to let the dough settle.&nbsp;<br><br>NB: Not that we always take our own advice. I tend to use one oven temperature, use rough measurements while having to combat a teenager trying to mainline the cookie dough. And I&#8217;ve never had to use icing to cover burn marks! But you know the old adage about doing what I say not what I do! <\/li>\n<\/ol>\n\n\n\n<p><\/p>\n\n\n\n<h4 class=\"wp-block-heading\">To get the best from your cookie cutter<\/h4>\n\n\n\n<ol class=\"has-background has-normal-font-size wp-block-list\" style=\"background-color:#d3d3d3\">\n<li>The most important thing to remember is that they\u2019re not dishwasher proof \u2013 a gentle wash by hand is all that\u2019s needed.<br><br>BUT \u2013 should the worst happen and someone puts your SED cutters in the dishwasher it is possible to regenerate them as you can see in our video below:<\/li>\n<\/ol>\n\n\n\n<figure class=\"wp-block-embed is-type-video is-provider-youtube wp-block-embed-youtube wp-embed-aspect-16-9 wp-has-aspect-ratio\"><div class=\"wp-block-embed__wrapper\">\n<iframe title=\"How to rescue a Cookie Cutter after it&#039;s been in the dishwasher\" width=\"800\" height=\"450\" src=\"https:\/\/www.youtube.com\/embed\/XQLYHkWxZvM?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe>\n<\/div><\/figure>\n\n\n\n<p class=\"has-background has-normal-font-size\" style=\"background-color:#d3d3d3\">2. Before you cut any dough, dip the cutter into flour \u2013 that helps reduce stickiness.<br><br>3. <strong>Cleaning the corners \u2013&nbsp;<\/strong>You can use a cocktail stick or a toothpick to wheedle into the corners of the cutter. Or you can be fancy and use a<strong>&nbsp;<a href=\"https:\/\/effiespantrycakes.bigcartel.com\/category\/scribe-tools\" target=\"_blank\" rel=\"noreferrer noopener\">scribe tool like this one from Effie\u2019s Pantry cakes.<\/a><\/strong> And finally &#8230;<br><br>4. &#8230; If you\u2019re using one of our stamps for fondant or dough then dust a wee sprinkle of icing sugar over them before you press them into anything.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>&nbsp;<\/strong>Time to make it a business?<\/h4>\n\n\n\n<p class=\"has-background has-normal-font-size\" style=\"background-color:#d3d3d3\">What, though, if it&#8217;s time to take that love of baking cookies to the next level? What if it&#8217;s time to make it a business&#8230; we gave a shout out to our Insta Cookiers, for their top tips to help make your business a success here we go.<\/p>\n\n\n\n<ol class=\"has-cyan-bluish-gray-background-color has-background wp-block-list\">\n<li>Find the decorating technique you like and work on it and perfect it, you don\u2019t have to know all techniques at once.<\/li>\n\n\n\n<li>Work on your recipes and find your perfect combos, because there\u2019s no point of good looking cookies that don\u2019t taste nice. Invest as much time in developing the flavours, it&#8217;s way more important than the decorating part, as at the end of the day they are to be eaten.<\/li>\n\n\n\n<li>Take time to work out packaging, especially if you will be posting them. It\u2019s important every time you change something about packaging, that you post it to yourself or someone close to you. To truly test how your biscuits travel.<\/li>\n\n\n\n<li>Don\u2019t be under pressure to have everything sorted before starting. For example for the first 6 months I had one simple logo which I created in a free app on my phone and one sticker. No business cards at all. Don\u2019t spend too much money until you\u2019re sure that\u2019s what you really want to do.<\/li>\n\n\n\n<li>Make sure you actually enjoy doing it, because otherwise you will waste money and then decide cookies are not for you.<\/li>\n\n\n\n<li>Get out there and give it a go &#8211; don&#8217;t wait for everything to be perfect before you begin, better to start and grow with your business.<\/li>\n\n\n\n<li>And finally, if any of you ever have any questions, feel free to politely reach out to the cookies you admire you never know they might give you a few pointers and tips.<\/li>\n<\/ol>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>&nbsp;<\/strong>You say cookie &#8211; we say biscuit<\/h4>\n\n\n\n<p class=\"has-background has-normal-font-size\" style=\"background-color:#d3d3d3\">Okay me star bakers, I mentioned at the top of the blog, how the cookie and the biscuit are not in fact the same thing with different names. Here\u2019s a <a href=\"https:\/\/www.bbcamerica.com\/anglophenia\/2014\/10\/biscuits-different-britain\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>bite-sized brief from BBC America <\/strong><\/a>on the difference:<br><br>The word&nbsp;<em>biscuit<\/em>&nbsp;comes from the Latin&nbsp;<em>bis<\/em>, meaning&nbsp;<em>twice<\/em>, and&nbsp;<em>coctus<\/em>, meaning&nbsp;<em>cooked<\/em>. The term came into use in 14th century England to describe a confection that was first baked and then dried out. That process produced a hard, flat item that goes soft over time and is delicious when you dip into a cup of your fave hot beverage.<br><br>For the British seafaring nation this made a practical food form. Hence ship\u2019s biscuits, or hard tack, were baked up to four times to make sure they didn\u2019t spoil on long voyages. Sailors dipped the tack in brine to soften it and broke the biscuits on their forearms. And that\u2019s why, to this day, the Makaton signing symbol for&nbsp;<em>biscuit&nbsp;<\/em>is a hand cupping an elbow<br><br>Meanwhile, from sometime in the early 1700s we find a Dutch word,&nbsp;<em>koekje<\/em>, meaning \u2018little cake.\u2019&nbsp;<em>Koekjes<\/em>&nbsp;often have a raising agent in them to create a cake-like texture. But, for the most part, they\u2019re biscuity enough to interchange with biscuits. That said, they\u2019re much softer than biscuits.
